As Valentine’s Day and everything related to it become a hot topic in the beginning of February, we thought of putting together a few romantic vegan Valentine’s Day recipes for a cozy dinner date for two! 

It’s a matter of your personal taste which recipe treats you should choose to surprise your loved one. When you’re in a healthy relationship,  you seriously may not want to spoil the moment of a great Valentine’s Day with bad food choices. Instead, you can choose these scrumptious vegan Valentine’s Day recipes, though it can require a bit of creativity & veganizing skills, which is exactly what we’re gonna help you with! 

Alright, so let’s do some cooking!

1) Vegan Bruschetta with Tomatoes and Basil Recipe

Vegan Bruschetta with Tomatoes and Basil Recipe for Valentine's Day Date

Ingredients: (you may click the ingredients to buy from Amazon)

  1. Baguette – 3-4 slices
  2. Tomatoes – 2-3 pcs
  3. Basil – 2 bunches
  4. Olive oil – 1 tbsp
  5. Himalayan pink salt & black pepper – to taste
  6. Lemon juice – 1 tsp

Directions:

  1. Grease baguette slices with olive oil;
  2. Put the slices into a dry, heated pan. You can also dry them in a toaster or grill in the oven;
  3. Cut the tomatoes into small cubes and pick the basil leaves, add salt, pepper and lemon juice to your taste. Mix. A few options are possible here: you can use sun-dried tomatoes or blanch them in a pan for 2-3 minutes. All that’s left is to carefully put the filling on toasted slices and sprinkle some greens or seeds on top.

2) Vegan Tofu Cheese Salad Recipe

  1. Eggplant – 2 pcs
  2. Bell pepper – 1 pcs
  3. Tofu – 150-200 g
  4. Tomatoes – 2 pcs
  5. Cilantro – 1 bunch
  6. Cooking oil – 3 tbsp
  7. Vinegar – 0.5 tsp
  8. Salt – to taste

Directions:

It’s served warm. The ingredients and their proportions may vary slightly depending on your taste:

  1. Peel the eggplant, cut it into medium-thin slices. Salt a little, mix, and leave for 10-15 minutes. Drain the water that has formed;
  2. Cut bell pepper into strips and tofu into cubes. Chop tomatoes and cilantro;
  3. Fry or bake the eggplant, controlling the amount of oil;
  4. Mix the ingredients, add 0.5 tablespoon of any vinegar, mix; 
  5. Serve.

3) Vegan Caesar Salad Recipe

A vegan variant of a famous salad

  1. Iceberg salad – 0.5 bunch
  2. Romaine lettuce – 1 pc
  3. Vegan croutons 
  4. Boiled chickpeas – 1.5 tbsp
  5. Olive oil – 1 tbsp
  6. Salt, cayenne pepper – to taste

Dressing:

  1. Cashew – 0.5 cup
  2. Olive oil – 3 tbsp
  3. Lemon juice – 1 tbsp
  4.  Mustard – 0.5 tbsp
  5.  Salt, black pepper – to taste
  6.  Water – as needed

Directions:

  1. Soak cashews for several hours or overnight. Rinse, dry. Roll in oil, spices, and salt, then bake at 200 °C for 20 minutes, stir, and bake for another 10-20 minutes;
  2. Mix all the ingredients for the dressing in a blender until a smooth, creamy state;
  3. Tear the lettuce. Add chickpeas, dressing, and crackers

4) Couscous with Tomatoes Vegan Meal Recipe

Ingredients: (you may click the ingredients to buy from Amazon)

  1. Raisins – 200 g
  2. Tomatoes – 2-3 pcs
  3. Parsley – 1 bunch
  4. Couscous – 1 glassful
  5. Tomato juice – 2 glasses
  6. Lemon – 0.5 pcs
  7. Olive oil – 2 tbsp
  8. Paprika – 2 tsp

Directions:

  1. Rinse the raisins (preferably with boiling water). Drain the water;
  2. Wash and chop the tomatoes in small cubes;
  3. Slice parsley;
  4. Put couscous in a deep bowl (so that you can easily mix it) and pour tomato juice into it. Squeeze the lemon;
  5. Add tomatoes, raisins, lemon juice, olive oil, paprika, and parsley to couscous and mix well;
  6. Leave the couscous to absorb water for about 20 minutes. Then boil for another 2-3 min;
  7. Put on a plate and decorate with a leaf of parsley. Done!

5) Vegan Lentil Cutlets Recipe

  1. Lentils – 3 cups 
  2. Salt – 2.5 tsp
  3. Black pepper, turmeric, cumin, khmeli-suneli (Georgian seasoning) – 1 tsp each
  4. Parsley – 1 bunch
  5. Beets – 1 large piece

Directions:

  1. Soak the lentils overnight, rinse in the morning, and drain the water;
  2. Grind the beets with lentils and spices in a blender at low speeds so that they become granular;
  3. Pour the mix into a bowl. Add salt to taste. Form patties with your hands, fry on both sides until golden brown in vegetable oil or coconut oil

6) Vegan Apple Dessert Recipe

  1. Large-sized apples – 5 pcs 
  2. Cinnamon – 2 tbsp
  3. Bananas – 4 pcs
  4. Coconut oil – 130 ml

Directions:

  1. Cut the apples into slices, mix with cinnamon, and put in the oven for 30 minutes at 200 °C;
  2. Put coconut oil into a blender. Add bananas and 2 tsp cinnamon, 1/5 tsp stevia (powder) for those who have a sweet tooth. Blend to a creamy, dense mass;
  3. Put the puree of baked apples in a bowl and pour the banana cream on top. Done!

7) Vegan Carrot Pie Recipe

  1. Carrots – 150 g
  2. All-purpose flour  – 150 g
  3. Water – 1 glass
  4. Sugar (vegan) – ¾ Cup 
  5. Baking powder 1 tsp 
  6. Vegetable oil – 8 tbsp
  7. A few cashew nuts (optional)

Directions:

  1. First, you need to cook the confectionery chips to decorate the cake. To do this, take 50 g of flour, 30 g of sugar, and a tablespoon of oil;
  2. Stir until lumps form and put in the refrigerator for 30-60 minutes;
  3. Let’s start making the dough. Mix all the loose ingredients: flour, sugar, baking powder;
  4. Add oil (7 tablespoons), water, and carrots grated on a medium grater;
  5. Mix and put into a baking mold;
  6. Sprinkle the pre-made confectionery crumbs on top;
  7. You can add nuts for decoration;
  8. Bake in a preheated oven for 60 minutes at 180 °C

It brought back so many cheerful memories and our taste buds were oozing with anticipation. Not to mention the aroma of a freshly baked chocolate cake which makes all the effort worth it.

It’s a perfect recipe for almost any occasion, be it a holiday, party, Valentine’s Day, Thanksgiving or Christmas celebration. You can feel family and friends getting anxious, keenly waiting for their slice of the delicious rich tasty chocolate cake.

Once it is cold and firm, we applied the chocolaty goodness with icing that gives its delightful creaminess. When it’s sliced up and served, felt like a little soft cloud wrapped in chocolate frosting, which is smooth and luscious!
