You can make it simple or as complicated as you like, and as long as you’re using good quality peanut butter & chocolate, there really isn’t anything better!

- 1 cup dark chocolate chips (vegan brands: Enjoy Life, Divvies, Simple Truth, Chocolate Dream, Lily's, Whole Foods: Everyday Value Dark Chocolate Baking Chunks, Wegmans: Semi-Sweet Chocolate Morsels)
- 1 teaspoon coconut oil
- 0.5 cup peanut butter
- 0.5 cup powdered sugar optional (confectioners' sugar, icing sugar)
- 1/2 teaspoon vanilla extract

- At 30 second intervals, melt chocolate chips with coconut oil. Stir until creamy. You'll only have to do this for about a minute.
- Brush the chocolate into silicone or paper cupcake liners. Brush the chocolate up the sides of the liners as well. Make sure that the bottom is even.
- Do it with all 12 liners, then let it set in the freezer for about 10 minutes (leave some chocolate to cover the top later)
- Meanwhile, mix the peanut butter, icing sugar, and vanilla extract to make the filling. Put 1 1/2 teaspoons of the mixture into the chilled chocolate cups until all the filling is evenly spread, pressing the filling evenly.
- Cover with about 1/2 teaspoon of chocolate (you'll use the remaining melted chocolate) and set in the freezer for about 15-20 minutes.
