  1. At 30 second intervals, melt chocolate chips with coconut oil. Stir until creamy. You’ll only have to do this for about a minute.
  2. Brush the chocolate into silicone or paper cupcake liners. Brush the chocolate up the sides of the liners as well. Make sure that the bottom is even.
  3. Do it with all 12 liners, then let it set in the freezer for about 10 minutes (leave some chocolate to cover the top later)
  4. Meanwhile, mix the peanut butter, icing sugar, and vanilla extract to make the filling. Put 1 1/2 teaspoons of the mixture into the chilled chocolate cups until all the filling is evenly spread, pressing the filling evenly.
  5. Cover with about 1/2 teaspoon of chocolate (you’ll use the remaining melted chocolate) and set in the freezer for about 15-20 minutes.
